Goudeau Creole, originally known as “Mavericks“, has been a dream discussed in my family for almost 30 years. My kids (now in their early 30s) grew up asking questions about Mavericks like it was as real to them as if it physically existed. I tell my wife all the time “Every day that we don’t open the restaurant we’re losing money“; I usually have a bite of chicken in my mouth when I say that Wanting to acknowledge my Creole heritage in my cooking, a friend told me Mavericks didn’t sound very Creole and suggested a name change. So, I grabbed my mother’s maiden name, which is about as Creole sounding as it can be, and transitioned Mavericks to its current name Goudeau Creole… but I see Mavericks making a comeback in the future-so stay in touch!
